Ministry of Municipalities and Housing issues updated regulatory Requirements for Central Kitchens, as part of its efforts to develop the regulatory framework for food activities, enhance operational efficiency, strengthen food safety, and create an attractive investment environment that supports economic growth.
The Ministry emphasized that the new requirements represent a qualitative leap in the management and operation of central kitchens, as they include precise standards covering licensing requirements, site selection within approved land uses and designated areas, compliance with setbacks and height restrictions in accordance with the Saudi Building Code, and the provision of sufficient parking spaces.
The Requirements also included advanced technical and operational controls, such as providing ventilation, cooling, and water drainage systems that meet specifications, ensuring an interior layout that facilitates staff movement and prevents cross-contamination, as well as conducting periodic inspections of preparation, storage, and serving areas to guarantee the highest levels of hygiene and food safety, especially for high-risk foods.
